This tank collects used cooking oil (UCO) from fryers, which is strained, cooled, and resembles syrup in color. Remarkably, American commercial kitchens collectively pour out approximately 2 million gallons of this oil every day.
For the majority of the last century, restaurants incurred a fee to have companies collect and dispose of this used oil. However, a significant shift has occurred within a single generation: today, those same collection companies pay the restaurants for their 'yellow grease' – the industry term for oil from fryers. This fundamental change was not about the oil itself, but entirely about its evolving market price, which now fluctuates between 21 and 41 cents per pound depending on monthly market dynamics.
This shift has elevated UCO from a waste product to a valuable commodity. A busy kitchen can fill a tank in a couple of weeks, and a single tanker route can service a hundred such tanks daily. Scaled nationwide, the collection business handles approximately 850 million gallons of UCO annually. This substantial volume represents roughly a quarter of all used cooking oil gathered globally, positioning American fryers as a critical supplier in an international commodity market. This evolution was unplanned, emerging from a change in what refineries were willing to purchase, with kitchens inadvertently becoming key suppliers.
The increased value has led to enhanced security measures for UCO collection. Grease tanks are now sold with robust features like bolted steel lids, keyed hasps, and level sensors that can instantly report a sudden drop in volume to a dispatcher. Collection trucks are equipped with trackers, and each load is accompanied by comprehensive paperwork, tracing the oil's journey from the kitchen door to the refinery gate. This rigorous handling, akin to managing a 'cash drawer,' reflects its newfound worth, especially considering that industry associations estimate hundreds of millions of dollars' worth of UCO goes missing across the country each year.
The primary driver for this transformation lies in fuel policy. A gallon of used cooking oil now earns valuable credits at a refinery that a gallon of crude oil cannot, turning the tank behind a restaurant into a small but consistent revenue stream. After collection, the oil undergoes processing where water and food solids are removed. It is then either reacted with alcohol to produce biodiesel or processed with hydrogen to yield renewable diesel. Further refining can even convert it into sustainable aviation fuel (jet fuel), which is a rapidly growing area of demand, as trade publications frequently highlight. Fuel produced this way can reduce lifecycle emissions by up to 80 percent compared to fossil kerosene. This environmental benefit means airlines are now actively bidding against traditional buyers like soap makers and feed mills for these same barrels, as indicated by trade data, underscoring the shift in UCO's role from a simple byproduct to a critical energy input.
Despite the sophisticated collection and processing for commercial sources, the recovery of used cooking oil from households remains largely underdeveloped. Only about a quarter of the UCO from American foodservice operations is recovered, equating to roughly two and a half gallons per person annually. Most household UCO never enters the collection system, often ending up poured down drains or disposed of in the trash. When poured down drains, the oil cools and solidifies, clinging to pipe walls and creating fat deposits that municipal crews must manually remove from sewers. To address this, some cities have begun establishing household drop-off points for UCO at existing sites that collect items like paint and batteries. However, the bottleneck for widespread household collection mirrors challenges in other infrastructure projects: establishing a viable route and funding for transportation to process facilities. For homeowners, the practical advice remains simple: allow the oil to cool, pour it back into its original bottle or another suitable container, and check with local waste management sites for disposal options. The padlock on the tank behind a restaurant serves as a clear testament to the significant value now attached to this once-discarded resource.
